Campo Viejo Tempranillo is the most vibrant expression of Tempranillo from Rioja. It shows fresh red fruit characteristics and a slight vanilla character from its four-month aging in American oak. The nose is intense and rich in aromas. First, it is with fresh red fruit, later with wood nuances and gentle, sweet notes of vanilla, and finished with other sweet spices. The palate is perfumed, soft, and fresh, with a long finish with memories of red fruit, vanilla, and cocoa.
The grapes are de-stemmed, gently crushed, and carried to stainless steel vats for fermentation at a controlled temperature. During fermentation, regular pump-overs are used to extract color and flavors. After fermentation, the wine ages in American oak barriques for four months, and in this stage, it gains the toasted aromas that complement the primary fruit character - pair well with pasta with tomato sauce, poultry, light cheeses, and grilled vegetables.
